Chicken salad

The unique blend of arugula, pepper, butter and hazelnuts is the perfect complement to our Chick’n seasoned. Do not have persimmons? Swap in a cup of fresh blueberries. Perfect as a complement to other vegetable courses with children, or as an independent main course. Pretty simple for a meal familiar or as a take along costume element. This salad can be served year-round.as a refreshing summer dish – or to dress a holiday dinner table.

Makes 4 servings

What you will need:

  • Zest and juice of 1 small lemon
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons chopped shallot
  • 5 ounces baby arugula (about 6 cups)
  • 2 Fuyu persimmons, peeled, halved and thinly sliced
  • ⅓ cup cut hazelnuts
  • 1 packet of seasoned Tofurky® Chick’n

How to do:

In a large bowl, mix the lemon peel, juice, oil, and shallots with a pinch of sea salt. Add the remaining ingredients and mix until well mixed. Cover with fresh black ground pepper.

Enjoy immediately!
